Rainbow Cookies - Kid's Co-op 4



Today Sammie and I were playing outside while Austin had his nap. He hasn't been feeling very good,(I think he's getting another tooth) and I wanted to keep him inside. So when he woke up from his nap, I needed a way to get Sammie to come inside without a having a huge fuss. I suggested baking some cookies, rainbow cookies. She loves rainbows :)

I had seen this recipe for rainbow cookies on Kitchen Counter Chronicles a while ago and have been wanting to try them out for quite some time :) I knew Sammie would get a kick out of baking a rainbow

It certainly wasn't hard to tell, as we started these cookies, that I don't usually bake cookies from scratch lol. Normally I just buy the Pillsbury pre-made cookies, where you take them out of the package, put them on a cookie sheet and bake. lol Sammie had no idea what I was doing or that it would take so many steps to make them :)

She wanted to stir everything, but had some trouble actually mixing things together. So I would let her stir it and then when she gave up, I would finish the mixing. :) She also got to help dump in the different ingredients. She loved dumping the flour into the bowl.



Sammie picked out the colours that she wanted our rainbows to be. She chose yellow, red and green. I was really surprised that she didn't pick purple lol



She quickly lost interest in baking them as soon as she realized that we had to put the dough in the freezer for an hour or so.
But once they were ready to cut, she came right back to help :)

I got her to eat more of her supper than she usually does, by reminding her that she had to eat her supper to be able to try one of her rainbows.

It was kind of chaotic baking these cookies today, as Austin was awake, not feeling very good, and wanting to be held onto. And hubby, Paul, was getting ready to go away for the weekend, so I was trying to help him as well. But I think our cookies still turned out pretty good, even with all the chaos :)
These were pretty neat cookies to make, but a bit trickier than I thought they would be. I think I must have done something wrong with the recipe as the dough was very dry and crumbly. I ended up adding extra butter to each colour in order to be able to roll them out flat and not end up with just crumbs.
